This slow cooker onion soup pot roast is the kind of simple, comforting meal that tastes like it came straight from Grandma’s kitchen. With only four ingredients, it slowly cooks into melt-in-your-mouth beef surrounded by tender onions and a rich, savory gravy. Ingredients
Servings: 6
3 to 3½ pounds beef chuck roast
2 packets (1-ounce each) dry onion soup mix
2 large yellow onions, thinly sliced
2 cups beef broth (preferably low-sodium)
Directions
Prepare the onion base
Peel the onions and slice them thinly into half-moons. Spread the sliced onions evenly across the bottom of a 6-quart slow cooker. This layer helps flavor the meat and creates the base for the gravy.
Add the roast
Pat the chuck roast dry with paper towels to remove excess moisture. Place the roast directly on top of the onions in the slow cooker.
Season the meat
Sprinkle the dry onion soup mix evenly over the top and sides of the roast. Lightly press it into the meat with your hands so it sticks well and seasons the roast thoroughly.
Pour in the broth
Carefully pour the beef broth around the sides of the roast. Try not to pour directly over the top so some of the seasoning stays on the meat while the rest blends into the broth and onions to form the gravy.
Slow cook
Cover with the lid and cook on LOW for 8–10 hours, until the beef becomes extremely tender and easily pulls apart with a fork.
Shred and mix
When the roast is done, use two forks to gently pull the beef into large chunks right inside the slow cooker. Stir the onions and cooking juices around the meat so everything is coated in the rich gravy.
Taste and adjust
Taste the gravy. The onion soup mix already contains salt, so you may not need to add any.
If you want a thicker gravy, mix 1–2 teaspoons cornstarch with a little hot liquid, stir it back into the slow cooker, and cook on HIGH for 10–15 minutes until slightly thickened.
Serve
Serve the pot roast hot with plenty of the soft onions and dark, glossy gravy spooned over the beef.
