Slow Cooker Family-Style Beef Stroganoff
A rich, creamy, comfort-food classic made easy in the slow cooker. Tender beef, savory mushrooms, and a velvety sauce—perfect for feeding a hungry family.
Ingredients
Serves 6–8 generously
The Foundation
2 to 2½ lbs beef stew meat, cut into 1–1½-inch chunks
1 tsp fine sea salt
½ tsp freshly cracked black pepper
1 medium yellow onion, finely chopped
8 oz cremini mushrooms, sliced (optional but highly recommended)
The Flavor Bomb Sauce
1 (10.5 oz) can condensed cream of mushroom soup
1½ cups low-sodium beef broth
2 tbsp Worcestershire sauce
1 tbsp Dijon mustard
3 garlic cloves, minced (about 1½ tsp)
1 tsp dried thyme (or 1 tbsp fresh, added at the end)
The Finish
¾ cup full-fat sour cream, at room temperature
2 tbsp cornstarch + 2 tbsp cold water (optional, for thickening)
Instructions
1️⃣ Layer the Base
Place the beef stew meat in the bottom of the slow cooker. Season evenly with salt and pepper.
Add chopped onion and sliced mushrooms over the beef.
2️⃣ Mix the Sauce
In a medium bowl, whisk together:
Cream of mushroom soup
Beef broth
Worcestershire sauce
Dijon mustard
Garlic
Dried thyme
Pour the mixture evenly over the beef and vegetables. Do not stir too much—just make sure the beef is mostly covered.
3️⃣ Slow Cook to Tender Perfection
LOW: 7–8 hours (best texture)
HIGH: 4–5 hours
The beef should be fork-tender and easy to shred.
4️⃣ Thicken (Optional but Recommended)
If you prefer a thicker sauce:
Mix cornstarch and cold water to make a slurry.
Stir into the slow cooker during the last 30 minutes on HIGH, uncovered, until thickened.
5️⃣ Finish with Sour Cream
Turn off the heat. Let sit for 5 minutes (this prevents curdling).
Stir in room-temperature sour cream until smooth and creamy.
Taste and adjust salt, pepper, or add more sour cream if desired.
If using fresh thyme, stir it in now.
