Ingredients
For the Cake:
3 cups (375g) all-purpose flour
2½ cups (500g) granulated sugar
1 tbsp baking powder
½ tsp baking soda
1 tsp salt
1½ cups (340g) unsalted butter, softened
6 large egg whites (or 3 whole eggs + 3 additional whites)
1½ cups (360ml) milk, at room temperature
½ cup (120ml) vegetable oil
2 tbsp vanilla extract
⅔ cup (120g) rainbow sprinkles (jimmies—avoid nonpareils)
For the Whipped Vanilla Buttercream:
2 cups (452g) unsalted butter, softened
6 cups (720g) powdered sugar
6 tbsp (90ml) milk or heavy cream
2 tsp vanilla extract
Pinch of salt
Instructions
1️⃣ Prepare the Funfetti Cake
1. Preheat your oven to 170°C (340°F). Grease six 6-inch cake pans and line the bottoms with parchment paper.
2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
3. Add the softened butter and mix until the mixture becomes fine and crumbly.
4. In a separate bowl, combine the milk, oil, egg whites, and vanilla.
5. Pour the wet mixture into the dry ingredients and beat until smooth and creamy.
6. Gently fold in the rainbow sprinkles—avoid overmixing to keep the colors bright.
7. Divide the batter evenly among the six prepared pans.
8. Bake for 18–22 minutes, or until the cakes spring back when lightly pressed.
9. Allow the layers to cool fully before assembling.
2️⃣ Make the Whipped Vanilla Buttercream
1. Beat the softened butter until pale, creamy, and fluffy.
2. Gradually add the powdered sugar while mixing.
3. Add the milk (or cream) and vanilla, then whip until the frosting becomes light and airy.
4. Mix in a pinch of salt to balance the sweetness.
3️⃣ Assemble the 6-Layer Cake
1. Level the tops of the cake layers if necessary.
2. Place the first layer on a cake board and spread a thin, even layer of buttercream.
3. Continue stacking and frosting each layer.
4. Apply a thin crumb coat and chill the cake for 20 minutes.
5. Add the final smooth layer of frosting.
6. Decorate with rainbow sprinkles along the base and over the top.
Pro Tips
Use room-temperature butter and eggs for the smoothest batter.
Chill the cake layers before stacking—they’ll be easier to handle and won’t slide.
Add extra sprinkles between layers for a fun pop of color when slicing!
