The Dark Citrus Tart

 

The Base (Shell)

 

Mix: 1½c Flour + ¼c Cocoa + ⅓c Sugar + Salt.

 

Cut: ½c Cold Butter.

 

Bind: 1 Yolk + 3 tbsp Ice Water.

 

Chill: 30 mins.

 

Bake: 350°F (20 mins weighted + 10 mins solo).

 

 

The Heart (Ganache)

 

Steep: 1c Hot Cream + 10oz Dark Chocolate (3 mins).

 

Silk: Stir in 3 tbsp Butter + 2 tbsp Liqueur + Vanilla.

 

Set: Pour into shell; chill for 2 hours.

 

 

 

The Crown (Glaze & Topping)

 

Syrup: Simmer ⅓c Sugar + ¼c Water + Lemon + Zest.

 

Dip: 30s for Blood Orange slices.

 

Style: Arrange rosettes. Finish with shavings, pepper, and sea salt.
