Ingredients
For the Steak
4 beef steak medallions (filet mignon or sirloin cuts)
2 tablespoons olive oil
2 tablespoons butter
4 garlic cloves, minced
1 teaspoon fresh rosemary or thyme
Salt and black pepper, to taste
For the Creamy Sauce
1 tablespoon butter
3 garlic cloves, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon Dijon mustard
1/2 teaspoon paprika
Salt and pepper, to taste
Optional Garnish
Fresh parsley, chopped
Extra Parmesan cheese
Instructions
Prepare the Steaks
Pat the steak medallions dry with paper towels. Season generously with salt and black pepper on both sides.
Sear the Steaks
Heat olive oil in a large skillet over medium-high heat. Add the steaks and cook for 3–4 minutes per side for medium-rare, or longer to your preferred doneness.
Add Garlic Butter
Reduce heat slightly and add butter, minced garlic, and rosemary. Spoon the melted garlic butter over the steaks for 1–2 minutes until fragrant and glossy. Remove steaks from the skillet and let them rest.
Make the Creamy Sauce
In the same skillet, melt butter and sauté garlic for about 30 seconds. Pour in the heavy cream and stir well. Add Parmesan cheese, Dijon mustard, paprika, salt, and pepper. Simmer gently until the sauce becomes smooth and creamy.
Finish the Dish
Return the steak medallions to the skillet and coat them in the creamy garlic sauce. Let everything warm together for 1–2 minutes.
