Zesty Shrimp & Avocado Lettuce Boats

 

Fresh, light, and bursting with flavor, these Shrimp & Avocado Lettuce Boats are the perfect quick meal or elegant appetizer. Juicy, paprika-seasoned shrimp are paired with creamy avocado and tucked into crisp lettuce leaves for a delicious bite that’s both refreshing and satisfying.

 

 

 

Ingredients

400 g large shrimp, peeled and deveined

1 tablespoon olive oil

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon chili flakes (optional)

Salt and freshly ground black pepper, to taste

2 ripe avocados, diced

1 tablespoon fresh lime juice

2 tablespoons fresh cilantro, chopped

2 green onions, thinly sliced

1 small tomato, finely diced

1 head butter lettuce or romaine, leaves separated and washed

Lime wedges, for serving

 

 

 

 

Instructions

Season the Shrimp In a medium bowl, toss the shrimp with olive oil, paprika, garlic powder, onion powder, chili flakes (if using), salt, and black pepper until evenly coated.

Cook the Shrimp Heat a large skillet over medium-high heat. Add the shrimp and cook for 2–3 minutes per side, or until pink, opaque, and lightly caramelized. Remove from heat and set aside.

Prepare the Avocado Filling In a separate bowl, gently combine the diced avocado, lime juice, cilantro, green onions, and diced tomato. Season lightly with salt and pepper. Toss carefully to keep the avocado chunky.

Assemble the Lettuce Boats Arrange the lettuce leaves on a serving platter. Spoon a generous amount of the avocado mixture into each leaf, then top with the warm cooked shrimp.

Serve Garnish with extra cilantro and a squeeze of fresh lime juice. Serve immediately while the shrimp are still warm and the lettuce is crisp.

For extra flavor, add a drizzle of spicy mayo or a sprinkle of crumbled feta.
