Ingredients
1½ lbs (700 g) beef stew meat
4 medium potatoes, peeled and diced
3 carrots, sliced
1 onion, chopped
3 cloves garlic, minced
3 cups beef broth
1 can diced tomatoes
2 tbsp tomato paste
1 tsp Worcestershire sauce
1 tsp paprika
1 tsp dried thyme
Salt and black pepper, to taste
2 tbsp flour or cornstarch (optional, for thickening)
Fresh parsley for garnish
Instructions
Place the beef, potatoes, carrots, onion, and garlic into the slow cooker.
In a bowl, mix together the beef broth, diced tomatoes, tomato paste, Worcestershire sauce, paprika, thyme, salt, and pepper. Pour over the ingredients in the slow cooker.
Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is tender and the vegetables are soft.
For a thicker stew, stir in flour or cornstarch mixed with a little water during the last 30 minutes of cooking.
Serve hot with fresh parsley and crusty bread for the perfect comforting meal ✨
