1½ lbs (680 g) ground beef
1 medium onion, finely chopped
2 cloves garlic, minced
1 can (10.5 oz) cream of mushroom soup
1 can (10.5 oz) cream of cheddar soup
1 cup sour cream
2 cups shredded sharp cheddar cheese, divided
3 cups frozen hash browns or diced potatoes
1 tsp onion powder
1 tsp garlic powder
½ tsp paprika
Salt and black pepper, to taste
Chopped parsley, for garnish (optional)
Instructions
In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
Add the chopped onion and garlic, cooking for 2–3 minutes until softened.
In a large mixing bowl, combine the cream of mushroom soup, cream of cheddar soup, sour cream, onion powder, garlic powder, paprika, salt, and pepper.
Stir the cooked beef mixture into the sauce until well combined.
Add the hash browns or diced potatoes and 1½ cups of the shredded cheddar cheese. Mix thoroughly.
Lightly grease the slow cooker and pour in the casserole mixture.
Cover and cook on Low for 5–6 hours or High for 2½–3 hours, until the potatoes are tender and the flavors are fully blended.
Sprinkle the remaining cheddar cheese over the top during the last 20 minutes of cooking.
Cover again and allow the cheese to melt completely.
Garnish with fresh parsley and serve hot.
