Ingredients (Serves 4)
4 boneless, skinless chicken breasts (about 2 lb / 900 g)
1 can (10.5 oz / 300 g) condensed cream of broccoli soup
3 cups frozen broccoli florets (do not thaw)
2 cups shredded cheddar cheese (divided)
Optional (not counted as ingredients):
Salt and black pepper to taste
Instructions
Preheat the oven
Set your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
Prepare the chicken
Place the chicken breasts in a single layer in the baking dish.
Pat them dry and season lightly with salt and pepper if desired.
Add the broccoli
Scatter the frozen broccoli florets around and over the chicken.
Add the soup
Stir the condensed cream of broccoli soup in a bowl to loosen it slightly.
Spoon it evenly over the chicken and broccoli and spread gently.
Add cheese (first layer)
Sprinkle 1½ cups of shredded cheddar cheese evenly on top.
Reserve the remaining ½ cup for later.
First bake
Cover the dish tightly with aluminum foil.
Bake for 20 minutes.
Second bake
Remove the foil and bake uncovered for 15–20 minutes, until:
Chicken reaches 165°F (74°C) internally
Broccoli becomes tender.
Final cheese topping
Sprinkle the remaining ½ cup cheese over the top.
Bake 5–8 minutes more until the cheese melts and bubbles.
Rest before serving
Let the dish sit for 5 minutes so the sauce thickens.
Serving Suggestions
Serve straight from the baking dish with:
Steamed rice
Buttered egg noodles
Mashed potatoes
Garlic bread or dinner rolls
A simple salad or sliced cucumbers
These sides help soak up the delicious cheesy broccoli sauce.
Variations & Tips
For picky eaters: chop broccoli into smaller pieces.
Different cheese: use mild cheddar or Colby-Jack.
Extra crunch: add crushed butter crackers or breadcrumbs during the last 5–8 minutes.
Alternative soup: use cream of chicken soup if cream of broccoli isn’t available.
For more servings: cut the chicken into chunks before baking.
Leftovers tip: Reheat in the microwave or oven with a small splash of milk to keep the sauce creamy.
