Cheesy Spinach Melt Bites (Easy 3-Ingredient Low-Carb Appetizer!)

These irresistible spinach melt bites are the kind of cozy, crowd-pleasing appetizer everyone gathers around. Inspired by simple family game-day traditions, this recipe delivers creamy, cheesy goodness with just three ingredients. Baked until bubbly and golden on top, each bite is rich, satisfying, and perfect for sharing—though don’t be surprised if they disappear fast!

Ingredients (Serves 8)

16 oz frozen chopped spinach, thawed and well-drained

8 oz cream cheese, softened

2 cups shredded mozzarella cheese, divided

Instructions

1. Preheat the Oven

Preheat your oven to 375°F (190°C). Lightly grease a medium (about 2-quart) casserole dish to help the edges crisp up beautifully.

2. Prepare the Spinach

Make sure the spinach is fully thawed, then squeeze out as much liquid as possible using your hands or a clean kitchen towel. This step is key to keeping the texture thick and creamy.

3. Mix the Base

In a large bowl, combine the drained spinach with the softened cream cheese. Stir and mash until the mixture is smooth and evenly blended.

4. Add Cheese

Fold in 1½ cups of the shredded mozzarella, mixing well until everything is fully incorporated.

5. Assemble & Bake

Spread the mixture evenly into the prepared casserole dish. Sprinkle the remaining ½ cup mozzarella over the top.

6. Bake to Perfection

Bake for 20–25 minutes, or until hot and bubbly with a golden, slightly crisp top.

7. Serve Warm

Let it cool slightly, then scoop and serve while still warm and melty.
