These baked mustard chicken meatballs are light, flavorful, and incredibly easy to make. Ground chicken is blended with herbs, Parmesan, and a hint of tangy mustard, then baked until golden and juicy. Ingredients
1 lb (450 g) ground chicken
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup fresh parsley, finely chopped
1 large egg
2 tablespoons Dijon mustard
2 cloves garlic, minced
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
Preheat the Oven
Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper or lightly grease it.
Mix the Meatball Base
In a large bowl, combine the ground chicken, breadcrumbs, Parmesan, parsley, egg, Dijon mustard, garlic, salt, and pepper. Mix gently until everything is just combined—don’t overmix to keep the meatballs tender.
Shape the Meatballs
Roll the mixture into small meatballs (about 1 to 1½ inches in diameter) and place them evenly on the prepared baking sheet.
Bake
Bake for 18–22 minutes, or until the meatballs are cooked through and lightly golden on the outside.

2 tablespoons Dijon mustard
1 tablespoon honey
1 tablespoon olive oil
Mix and drizzle over the warm meatballs, then return to the oven for 3–5 minutes for a glossy finish.
