Hearty One-Pan Beef & Golden Potato Skillet

There’s nothing quite like a warm, home-cooked skillet filled with tender beef and perfectly cooked potatoes. This rustic dish brings together rich, savory flavors in one pan, making it an easy and satisfying meal that feels like pure comfort on any day of the week.

 

 

 

Ingredients

1 ½ lb beef stew meat, cut into bite-sized pieces

4 medium potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon butter

1 ½ teaspoons salt (adjust to taste)

1 teaspoon black pepper

1 teaspoon paprika

½ teaspoon dried thyme

½ teaspoon dried oregano

1 bay leaf

1 tablespoon tomato paste

1 ½ cups beef broth

1 teaspoon Worcestershire sauce

2 tablespoons fresh parsley, chopped

 

 

 

 

Instructions

Sear the Beef

Heat olive oil and butter in a large skillet over medium-high heat. Add the beef in a single layer and sear for 4–5 minutes, turning occasionally, until nicely browned. Cook in batches if needed, then set aside.

Sauté Aromatics

In the same pan, reduce heat to medium and add the chopped onion. Cook for 2–3 minutes until soft, then stir in the garlic and cook for about 30 seconds until fragrant.

Build the Flavor

Stir in the tomato paste, salt, pepper, paprika, thyme, and oregano. Mix well so everything is coated and the tomato paste slightly caramelizes.

Add Potatoes & Liquid

Return the beef to the skillet and add the diced potatoes. Pour in the beef broth and Worcestershire sauce, then add the bay leaf. Stir gently to combine.

Simmer to Perfection

Cover and let simmer on low heat for 30–35 minutes, stirring occasionally, until the beef is tender and the potatoes are fully cooked. Add a splash of broth if needed to keep it moist.

 

 

 

 

Finish & Serve

Remove the lid for the last 5 minutes to thicken the sauce slightly. Discard the bay leaf, taste, and adjust seasoning if needed. Sprinkle with fresh parsley before serving.
