Fall-Apart Garlic Braised Beef Shanks
Few dishes feel as comforting and indulgent as slow-braised beef shanks bathed in a rich, garlicky gravy. The meat becomes irresistibly tender, soaking up deep savory flavors, while a side of crispy golden fries adds the perfect contrast in texture. This is a rustic, soul-warming meal that tastes like it’s been simmering with care all day.
Ingredients
For the Beef Shanks
2 large bone-in beef shanks
4 cloves garlic, finely minced
1 medium onion, finely chopped
2 tablespoons olive oil
1 tablespoon butter
1 cup beef broth
½ cup tomato sauce
2 tablespoons soy sauce
1 tablespoon Worcestershire sauce
1 teaspoon paprika
½ teaspoon black pepper
1 teaspoon salt (adjust to taste)
1 teaspoon dried thyme or rosemary
1 tablespoon flour (optional, for thickening)
For the Fries
2 large potatoes, cut into fries
Vegetable oil, for frying
Salt, to taste
For Garnish
Fresh parsley, chopped (optional)
Instructions
Season & Sear
Pat the beef shanks dry and season generously with salt, pepper, and paprika. Heat olive oil and butter in a heavy skillet or Dutch oven over medium-high heat. Sear the shanks until deeply browned on all sides, then set aside.
Build the Base
In the same pan, lower the heat to medium and sauté the onion until soft and lightly golden. Add the garlic and cook for about a minute until fragrant.
Create the Sauce
Stir in the tomato sauce, soy sauce, Worcestershire sauce, and dried herbs. Let it simmer briefly so the flavors meld together.
Slow Braise
Return the beef shanks to the pot and pour in the beef broth until it reaches about halfway up the meat. Cover and simmer on low heat for 2 to 2½ hours, or transfer to a 160°C (320°F) oven and braise until the meat is fork-tender.
Thicken (Optional)
For a richer gravy, mix the flour with a little water to create a slurry and stir it into the sauce during the last 10 minutes of cooking.
Prepare the Fries
Soak the cut potatoes in cold water for 20 minutes, then drain and dry well. Fry in hot oil until golden and crispy. Remove and season lightly with salt.
Serve & Enjoy
Plate the tender beef shanks and generously spoon the garlic gravy over the top. Serve alongside the crispy fries and finish with a sprinkle of fresh parsley.
