Garlic Butter Steak Bites Stuffed Baked Potatoes

 

 

 

Crispy, smoky baked potatoes loaded with creamy cheese filling and juicy garlic-herb steak bites — this hearty comfort-food recipe is perfect for family dinners, game nights, or weekend grilling. Every bite is packed with rich buttery flavor, melted cheese, and tender filet mignon.

Ingredients

For the Baked Potatoes

4 large russet potatoes

2 tablespoons olive oil

2 teaspoons kosher salt

Creamy Filling

3/4 cup sour cream

1 cup shredded pepper jack cheese

1/4 cup fresh chives, finely chopped

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

Steak Bites

1 lb filet mignon medallions, cut into 1-inch cubes

1 tablespoon olive oil

1 teaspoon kosher salt

1/2 teaspoon black pepper

1 teaspoon steak seasoning (optional)

Garlic Herb Butter

4 tablespoons unsalted butter

2 garlic cloves, minced

1 tablespoon fresh parsley, chopped

1/2 teaspoon fresh rosemary, finely chopped

1/2 teaspoon fresh thyme leaves

Pinch of kosher salt

 

 

 

 

Instructions

1. Prepare the Potatoes

Preheat your grill to medium-high heat, about 400–425°F (200–220°C).

Scrub the potatoes thoroughly and pierce each one several times with a fork. Rub them with olive oil and coat evenly with kosher salt.

Wrap each potato tightly in foil and place them on the grill. Cook for 45–60 minutes, or until fork-tender.

2. Make the Garlic Herb Butter

While the potatoes are cooking, melt the butter in a small saucepan over medium heat.

Add the minced garlic and sauté for about 30 seconds until fragrant. Stir in the parsley, rosemary, thyme, and a pinch of salt. Remove from heat and set aside.

3. Cook the Steak Bites

In a mixing bowl, toss the steak cubes with olive oil, kosher salt, black pepper, and steak seasoning if using.

Heat a cast iron skillet over high heat on the grill or stovetop. Sear the steak bites for about 2–3 minutes per side until beautifully browned and cooked to your preferred doneness.

Drizzle about 1 tablespoon of the garlic herb butter over the steak bites and toss gently to coat.

4. Prepare the Creamy Filling

In a bowl, combine the sour cream, shredded pepper jack cheese, chopped chives, salt, and black pepper.

5. Assemble the Loaded Potatoes

Carefully unwrap the cooked potatoes and cut each one lengthwise about three-quarters of the way through.

Gently squeeze the ends to open the potatoes. Spoon the creamy cheese mixture inside each potato, then top generously with the sizzling steak bites.

Drizzle the remaining garlic herb butter over the top for an extra burst of flavor.

Garnish with additional fresh chives and serve immediately while hot and melty.
