Ingredients:
3 cups cucumbers, thinly sliced (about 2–3 medium cucumbers)
2 cups tomatoes, chopped (or halved cherry tomatoes)
1 small red or white onion, thinly sliced
1/4 cup white vinegar (or apple cider vinegar)
2 tablespoons olive oil
1–2 tablespoons sugar (adjust to taste)
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh parsley or dill, chopped (optional)
Instructions:
Prepare the vegetables:
Wash and slice the cucumbers, chop the tomatoes, and thinly slice the onion. Place everything in a large mixing bowl.
Make the marinade:
In a small bowl, whisk together the vinegar, olive oil, sugar, salt, and black pepper until well combined.
Combine and toss:
Pour the dressing over the vegetables and gently toss until everything is evenly coated.
Marinate:
Cover the bowl and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor). Stir once or twice during marinating.
Finish and serve:
Sprinkle with fresh herbs if using, give it a final toss, and serve chilled.
