Cheesy Green Chile Potato Bake with Crispy Parmesan Crust

Creamy mashed potatoes, smoky green chile, and bubbling melted cheese come together in this comforting baked casserole. Finished with a buttery Parmesan crust, this cozy dish is packed with rich flavor and irresistible texture in every bite. Ingredients

3 large russet potatoes, baked until tender

4 tablespoons salted butter, divided

2 garlic cloves, minced

3 tablespoons grated Parmesan cheese

½ cup sour cream

½ cup roasted hot green chile

1½ cups shredded cheddar or Monterey Jack cheese

Small piece of white onion

Freshly cracked black pepper, to taste

Garlic salt, to taste

Pinch of salt

Instructions

1. Prepare the Potatoes

Bake or microwave the potatoes until soft and fully cooked. Allow them to cool slightly, then peel if desired. Mash the potatoes with a potato masher, leaving a few chunks for a rustic texture.

 

 

 

2. Make the Parmesan Garlic Base

Preheat your oven to 350°F (175°C).

Place a cast iron skillet or baking dish over medium heat. Melt 2 tablespoons of butter, then stir in the minced garlic and cook for about 1 minute until fragrant. Sprinkle the Parmesan cheese evenly over the bottom to create a flavorful golden crust.

3. Mix the Creamy Potato Filling

In a large mixing bowl, combine the mashed potatoes with the remaining butter and sour cream. Season with black pepper and garlic salt. Stir until creamy and well blended.

4. Blend the Green Chile Mixture

Add the roasted green chile, onion, and a pinch of salt to a blender or food processor. Blend until mostly smooth with a little texture remaining.

5. Assemble the Casserole

Spread the mashed potato mixture evenly into the skillet over the Parmesan crust. Spoon the green chile mixture across the top, then sprinkle generously with shredded cheese.

6. Bake Until Golden

Bake for 30–35 minutes, or until the cheese is melted, bubbly, and lightly golden around the edges.

 

 

 

7. Serve & Enjoy

Allow the casserole to rest for a few minutes before serving. Garnish with chopped green onions, parsley, or extra Parmesan if desired.
