Cheesy Herb-Baked Broccoli & Potato Casserole
A comforting and flavorful oven-baked dish loaded with tender potatoes, fresh broccoli, melted cheese, and aromatic herbs. This easy casserole is the perfect side dish for family dinners or a satisfying vegetarian meal that everyone will love!
Ingredients
1 kg potatoes, peeled and thinly sliced
1 head broccoli, cut into florets
½ teaspoon salt (for boiling the broccoli)
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried parsley
½ teaspoon black pepper
1 teaspoon salt (or to taste)
200 g shredded mozzarella cheese
100 g grated cheddar cheese
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 190°C (375°F) and lightly grease a baking dish.
Bring a large pot of water to a boil. Add the broccoli florets and ½ teaspoon salt. Cook for 2–3 minutes until slightly tender, then drain and set aside.
In another pot, boil the sliced potatoes for about 5 minutes until they begin to soften. Drain well.
Place the potatoes in a large mixing bowl. Add the olive oil, garlic powder, oregano, parsley, black pepper, and salt. Toss until evenly coated.
Arrange half of the seasoned potatoes in the prepared baking dish. Top with the broccoli florets and sprinkle half of the mozzarella and cheddar cheeses over the vegetables.
Add the remaining potatoes and finish with the rest of the cheese, covering the entire surface.
Bake for 30–35 minutes, or until the potatoes are fully tender and the cheese is melted, bubbly, and golden brown.
Remove from the oven and let rest for 5 minutes before serving.
Garnish with freshly chopped parsley and serve warm.
