Ingredients
3 large eggs
3 medium potatoes, peeled and grated
1 small onion, finely chopped
1 carrot, grated
2 tablespoons all-purpose flour
1 teaspoon salt (or to taste)
½ teaspoon paprika
½ teaspoon black pepper
2 tablespoons olive oil
1 cup shredded mozzarella or cheddar cheese
Fresh parsley, chopped (for garnish)
Instructions
Grate the potatoes and carrot, then place them in a clean kitchen towel and squeeze out any excess moisture.
In a large mixing bowl, whisk the eggs until smooth.
Add the grated potatoes, carrot, chopped onion, flour, salt, paprika, and black pepper. Mix well until everything is evenly combined.
Stir in half of the shredded cheese.
Heat the olive oil in a large non-stick skillet over medium heat.
Pour the potato mixture into the skillet and spread it evenly.
Cook for 8–10 minutes, or until the bottom is golden brown and crispy.
Carefully flip the frittata using a large plate or lid, then cook for another 6–8 minutes on the other side.
Sprinkle the remaining cheese over the top, cover the skillet, and cook for 2–3 minutes until the cheese is melted.
Remove from the heat and let it rest for a few minutes before slicing.
