Chocolate Cake with 7-Minute Frosting
A classic homemade chocolate cake topped with light, fluffy 7-minute frosting. The cake is rich and moist thanks to boiling water in the batter, while the frosting is airy and glossy, similar to marshmallow cream.
Ingredients
For the Chocolate Cake
2 cups boiling water
1/2 cup butter, slightly softened
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 3/4 cups sugar
6 tablespoons cocoa powder
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
For the 7-Minute Frosting
1 1/2 cups granulated sugar
2 egg whites
1/4 teaspoon cream of tartar
1/3 cup water
1 teaspoon vanilla extract
Pinch of salt
Instructions
1. Prepare the Cake
Preheat the oven to 350°F (175°C).
Grease and flour two 9-inch round cake pans or one 9×13 inch pan.
2. Mix the Batter
In a large bowl, whisk together:
flour
sugar
cocoa powder
baking powder
baking soda
salt
Add:
softened butter
eggs
vanilla
Mix with a mixer until combined.
3. Add the Boiling Water
Slowly pour in the boiling water while mixing.
The batter will be thin — this is normal and helps create a moist cake.
4. Bake
Pour the batter into the prepared pans.
Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
Let the cake cool completely before frosting.
Make the 7-Minute Frosting
In a heatproof bowl, combine:
sugar
egg whites
water
cream of tartar
salt
Place the bowl over a pot of simmering water (double boiler method).
Beat with a hand mixer on high speed for about 7 minutes until:
the frosting becomes thick
glossy
forms stiff peaks.
Remove from heat and beat in the vanilla extract.
Assemble the Cake
Place one cake layer on a serving plate.
Spread a thick layer of 7-minute frosting on top.
Add the second layer and frost the top and sides of the cake.
Create soft swirls with a spatula for a classic look.
Tips for Best Results
The frosting should be used immediately after making it.
For extra flavor, sprinkle chocolate shavings or toasted coconut on top.
This cake tastes even better after resting a few hours.
