Ingredients:

2 to 3 pounds pork loin

2 cups apple cider

1 cup apple slices (fresh or canned, drained)

1 medium onion, sliced

4 cloves garlic, minced

1/4 cup brown sugar

2 tablespoons Dijon mustard

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

Salt and black pepper, to taste

2 tablespoons olive oil

1 tablespoon cornstarch (optional, for thickening)

2 tablespoons water (optional)

Instructions:

Sear the Pork (Optional but Recommended):

Heat olive oil in a skillet over medium-high heat. Season the pork loin with salt and pepper, then sear on all sides until golden brown. This step adds extra flavor.

Prepare the Base:

Place the sliced onions and apples in the bottom of your slow cooker. Add the minced garlic on top.

Add the Pork:

Place the seared pork loin over the apple and onion mixture.

Mix the Sauce:

In a bowl, whisk together apple cider, brown sugar, Dijon mustard, cinnamon, and nutmeg. Pour the mixture evenly over the pork.

Slow Cook to Perfection:

Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the pork is tender and fully cooked.

Thicken the Sauce (Optional):

If you prefer a thicker sauce, mix cornstarch with water and stir it into the slow cooker during the last 20–30 minutes of cooking.

Serve & Enjoy:

Slice the pork loin and serve it with the apple-onion mixture and sauce spooned over the top.

Serving Suggestions:

Serve with mashed potatoes, roasted vegetables, or buttered rice to soak up the delicious sauce.

Tips:

Use fresh apples like Granny Smith or Honeycrisp for the best flavor.

For extra richness, add a small knob of butter at the end of cooking.

Leftovers make amazing sandwiches the next day!

Enjoy this hearty, comforting dish that tastes like it came straight from a farmhouse kitchen
