Cottage Cheese Banana Oat Protein Pancake Bites
Soft, naturally sweet, and packed with protein — perfect for breakfast meal prep or a healthy snack!
Ingredients (Makes 18–20 bites)
Base Batter:
1 cup cottage cheese (full-fat or low-fat)
1 ripe banana
1 cup rolled oats
2 large eggs
1 tsp baking powder
1 tsp vanilla extract
½ tsp cinnamon (optional)
Pinch of salt
Optional Add-Ins:
2–3 tbsp mini chocolate chips
¼ cup blueberries
2–3 tbsp chopped walnuts or pecans
1 scoop vanilla protein powder
(If using protein powder, add 1–2 tbsp milk if batter becomes too thick.)
Instructions
1️⃣ Preheat & Prep
Preheat oven to 350°F (175°C).
Lightly grease a mini muffin tin or line with silicone liners.
2️⃣ Blend the Batter
Add cottage cheese, banana, oats, eggs, baking powder, vanilla, cinnamon, and salt to a blender.
Blend until smooth and creamy (about 30–45 seconds).
The batter should be thick but pourable.
3️⃣ Add Extras
Stir in any add-ins by hand (don’t blend them unless you want them fully mixed in).
4️⃣ Fill & Bake
Spoon batter into mini muffin cups, filling about ¾ full.
Bake for 15–18 minutes, or until tops are lightly golden and set.
5️⃣ Cool & Enjoy
Let cool for 5 minutes before removing from pan.
Serve warm or let cool completely for meal prep.
Serving Ideas
Drizzle with maple syrup or honey
Spread with almond or peanut butter
Dip in Greek yogurt
Dust lightly with powdered sugar
Storage Tips
Store in an airtight container in the fridge for up to 5 days.
Freeze up to 2 months.
