Ingredients
1 lb (450 g) ribeye steak or thinly sliced beef
1 tablespoon olive oil
1 small onion, finely sliced
1 green bell pepper, thinly sliced
1 cup mushrooms, chopped (optional)
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon black pepper
8 slices provolone cheese, chopped
12 egg roll wrappers
1 egg, beaten (for sealing)

Instructions
1. Prepare the Filling
Heat olive oil in a large skillet over medium-high heat. Add the onions, bell peppers, and mushrooms (if using). Sauté for 4–5 minutes until softened and lightly caramelized.
Add the sliced beef, garlic powder, salt, and black pepper. Cook for 3–4 minutes until the beef is fully cooked. Remove from heat and allow the mixture to cool slightly.
Stir in the chopped provolone cheese while the filling is still warm.
2. Assemble the Egg Rolls
Lay an egg roll wrapper on a clean surface in a diamond shape. Spoon 2–3 tablespoons of filling into the center.
Fold the bottom corner over the filling, then fold in the sides. Roll tightly toward the top corner, brushing the edges with beaten egg to seal.
Repeat with the remaining wrappers and filling.
3. Fry Until Golden
Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).
Carefully fry the egg rolls in batches for 3–4 minutes, turning occasionally, until golden brown and crispy on all sides.
Transfer to a paper towel-lined plate to drain excess oil.
