Crispy Tofu & Egg Delight with Vegetables and Sausage

Ingredients

3 pieces firm tofu, cubed

6 large eggs

1 sausage, diced

1 medium carrot, grated

2 tbsp cooking oil

½ tsp black pepper

Instructions

Pat the tofu dry and cut it into bite-sized cubes.

Heat the oil in a large non-stick skillet over medium heat.

Add the tofu and cook until golden and crispy on all sides, about 6–8 minutes.

Add the diced sausage and cook for 2 minutes until lightly browned.

Stir in the grated carrot and chopped green onions. Cook for another 2 minutes.

In a bowl, whisk the eggs with salt, pepper, soy sauce, and garlic powder.

Pour the egg mixture over the tofu and vegetables.

Reduce the heat to low and cook until the eggs are mostly set.

Gently fold and stir until everything is fully cooked and fluffy.
