Crockpot Smokies with Beans and Potatoes
Ingredients
14 oz smoked sausage or cocktail smokies, sliced
3 cups baby potatoes, halved
1 can (15 oz) baked beans
1 can (15 oz) kidney beans, drained and rinsed
1 small onion, chopped
2 cloves garlic, minced
1 cup chicken broth
Optional Seasonings (recommended for extra flavor)
1 tsp smoked paprika
½ tsp black pepper
½ tsp salt (adjust to taste)
½ tsp dried thyme or Italian seasoning
1 tbsp ketchup or BBQ sauce (for a richer taste)
Instructions
Prep the ingredients
Slice the sausage into bite-sized pieces.
Halve the baby potatoes.
Chop the onion and mince the garlic.
Layer in the crockpot
Add potatoes first (they take longer to cook).
Add sausage, onion, and garlic on top.
Pour in baked beans and kidney beans.
Add liquid & seasoning
Pour in the chicken broth.
Sprinkle in optional seasonings if using.
Gently stir to combine everything.
Cook
Low: 6–7 hours
High: 3–4 hours
Cook until potatoes are fork-tender.
Final touch
Stir well before serving.
Taste and adjust seasoning if needed.
