Easy Lemon 7UP Cake (Super Moist & Fluffy!)
This classic lemon cake is light, fluffy, and bursting with citrus flavor. The 7UP makes it incredibly tender, and it’s so easy—no mixer skills needed!
Ingredients
Cake
- 1 box lemon cake mix
- 1 small box (3.4 oz) instant lemon pudding mix
- 4 large eggs
- 1 cup 7UP (or any lemon-lime soda)
- ¾ cup vegetable oil
Optional Lemon Glaze (Highly Recommended!)
- 1½ cups powdered sugar
- 2–3 tablespoons fresh lemon juice
- 1 tablespoon melted butter (optional, for richness)
Instructions
- Preheat Oven
Preheat your oven to 350°F (175°C).
Grease and flour a Bundt pan or a 9×13-inch baking dish. - Mix the Batter
In a large bowl, combine:- Lemon cake mix
- Instant lemon pudding mix
- Eggs
- 7UP
- Vegetable oil
Beat with a whisk or mixer on medium speed for 2 minutes, until smooth and creamy.
- Bake
Pour the batter into the prepared pan.- Bundt pan: Bake 40–45 minutes
- 9×13 pan: Bake 30–35 minutes
Cake is done when a toothpick inserted in the center comes out clean.
- Cool
Let the cake cool in the pan for 10–15 minutes, then turn out onto a plate or leave in the pan.
Lemon Glaze (Optional but Amazing!)
- Whisk powdered sugar, lemon juice, and melted butter until smooth.
- Drizzle over the warm cake so it soaks in beautifully.
Tips & Variations
- Use diet 7UP if you want a slightly lighter version.
- Add lemon zest to the batter for extra zing.
- Dust with powdered sugar instead of glaze for a simple finish.
