 Easy Lemon 7UP Cake (Super Moist & Fluffy!)

This classic lemon cake is light, fluffy, and bursting with citrus flavor. The 7UP makes it incredibly tender, and it’s so easy—no mixer skills needed!

 Ingredients

Cake

  • 1 box lemon cake mix
  • 1 small box (3.4 oz) instant lemon pudding mix
  • 4 large eggs
  • 1 cup 7UP (or any lemon-lime soda)
  • ¾ cup vegetable oil

Optional Lemon Glaze (Highly Recommended!)

  • 1½ cups powdered sugar
  • 2–3 tablespoons fresh lemon juice
  • 1 tablespoon melted butter (optional, for richness)

 Instructions

  1. Preheat Oven
    Preheat your oven to 350°F (175°C).
    Grease and flour a Bundt pan or a 9×13-inch baking dish.
  2. Mix the Batter
    In a large bowl, combine:

    • Lemon cake mix
    • Instant lemon pudding mix
    • Eggs
    • 7UP
    • Vegetable oil

    Beat with a whisk or mixer on medium speed for 2 minutes, until smooth and creamy.

  3. Bake
    Pour the batter into the prepared pan.

    • Bundt pan: Bake 40–45 minutes
    • 9×13 pan: Bake 30–35 minutes

    Cake is done when a toothpick inserted in the center comes out clean.

  4. Cool
    Let the cake cool in the pan for 10–15 minutes, then turn out onto a plate or leave in the pan.

 Lemon Glaze (Optional but Amazing!)

  1. Whisk powdered sugar, lemon juice, and melted butter until smooth.
  2. Drizzle over the warm cake so it soaks in beautifully.

 Tips & Variations

  • Use diet 7UP if you want a slightly lighter version.
  • Add lemon zest to the batter for extra zing.
  • Dust with powdered sugar instead of glaze for a simple finish.
