These playful frozen yogurt bites look just like tiny fried eggs but hide a refreshing pineapple “yolk” inside for the ultimate healthy summer surprise.
Ingredients:
Yogurt Base
2 cups plain Greek yogurt
2 tbsp honey
1 tsp vanilla extract
“Sunny Yolk”
½ cup pineapple chunks
2 tbsp mango purée
1 tbsp honey
1 tsp lemon juice
Garnish
Unsweetened shredded coconut
Fresh mint leaves
A creamy frozen yogurt “egg white” surrounds a glossy tropical pineapple center, creating a fun illusion that’s as refreshing as it is delicious.
Instructions:
Mix the Greek yogurt, honey, and vanilla until smooth.
Blend the pineapple, mango purée, honey, and lemon juice until silky.
Spoon the yogurt into silicone muffin molds or onto a parchment-lined tray, shaping each into a small round with gently uneven edges to resemble fried egg whites.
Add one spoonful of pineapple purée to the center of each yogurt round.
Freeze for 3–4 hours, or until completely firm.
Sprinkle lightly with shredded coconut for extra texture.
Garnish with fresh mint if desired.
Serve immediately while frozen.
