The result is a warm, home-style meal that feels both nourishing and deeply comforting.
Ingredients
For the cabbage rolls:
1 large green cabbage
1 lb (450 g) ground beef (or a mix of beef and rice for a lighter option)
1/2 cup uncooked rice
1 small onion, finely chopped
2 cloves garlic, minced
1 egg
2 tablespoons chopped parsley
Salt and pepper, to taste
For the vegetable bed:
1 onion, sliced
1 carrot, grated
1 bell pepper, sliced
2 tablespoons olive oil
For the sauce:
2 cups tomato sauce
1 tablespoon tomato paste
1 teaspoon paprika
1 teaspoon dried oregano
Salt and pepper, to taste
Instructions
Prepare the Cabbage
Bring a large pot of water to a boil. Carefully remove the core of the cabbage and place the whole head into the boiling water. As the leaves soften, gently peel them off one by one. Set aside to cool.
Make the Filling
In a bowl, combine ground beef, uncooked rice, chopped onion, garlic, egg, parsley, salt, and pepper. Mix until well combined.
Assemble the Rolls
Place a portion of filling onto each cabbage leaf. Fold in the sides and roll tightly to form neat bundles.
Prepare the Vegetable Base
In a baking dish, spread the sliced onion, grated carrot, and bell pepper. Drizzle with olive oil to create a flavorful base.
Arrange the Rolls
Place the cabbage rolls seam-side down on top of the vegetable bed.
Add the Sauce
In a bowl, mix tomato sauce, tomato paste, paprika, oregano, salt, and pepper. Pour evenly over the rolls.
Bake to Perfection
Cover with foil and bake at 375°F (190°C) for about 1 hour, or until the cabbage is tender and the filling is fully cooked.
Serving Suggestions
Serve these cabbage rolls hot, spooning some of the rich vegetable sauce over the top. They pair beautifully with crusty bread or a side of mashed potatoes.
