Mexican Casserole Bake

A warm, cheesy, flavor-packed dinner that’s perfect for busy nights or family gatherings!

Ingredients

1 lb lean ground beef

1 can Ranch Style beans

1 (10–12 oz) bag tortilla chips, crushed (you may not need the entire bag)

1 can Ro-Tel tomatoes

1 small onion, finely chopped

2 cups shredded cheddar cheese, divided

1 packet taco seasoning

1 can cream of chicken soup

1/2 cup water

Sour cream and salsa, for serving

 

 

 

Directions

1. Preheat your oven to 325°F (165°C).

2. In a large skillet, brown the ground beef until fully cooked, then drain any excess fat.

3. Add the beans, Ro-Tel tomatoes, onion, taco seasoning, cream of chicken soup, and water to the skillet.

4. Stir well and simmer over medium-low heat until the mixture is fully heated and combined.

5. Lightly grease a 9×13-inch baking dish.

6. Spread a layer of crushed tortilla chips in the bottom of the dish.

7. Add a layer of the meat and bean mixture, then sprinkle half of the cheddar cheese on top.

8. Repeat the layers: chips → meat mixture → cheese.

9. Cover with foil and bake for 20–30 minutes, or until hot and bubbly.

10. Let the casserole rest for 5–10 minutes before serving.

11. Top with sour cream and salsa for extra flavor!
