Ingredients

1 cup water

Instructions
Prepare the Apricots
Wash the apricots thoroughly, cut them in half, and remove the pits.
Make the Simple Syrup
In a small saucepan, combine the water and sugar over medium heat.
Stir until the sugar completely dissolves.
Remove from the heat and allow the syrup to cool completely.
Blend
Add the apricots, cooled syrup, lemon juice, and optional lemon zest to a blender.
