Slow-Cooker Cowboy Comfort Soup (Rich, Hearty & Family-Approved)
This cozy, stick-to-your-ribs cowboy soup is the kind of no-fuss meal that fills your kitchen with comforting aromas and your bowl with bold, satisfying flavor. It’s packed with seasoned beef, tender potatoes, and a medley of vegetables—all brought together with a simple, nostalgic twist.
Ingredients
2 lbs ground beef
4 Yukon Gold potatoes, peeled and diced
2 cans mixed vegetables (undrained)
1 can sweet corn (undrained)
1 can condensed tomato soup
1 can petite diced tomatoes
1 can cut green beans (undrained)
Pinch of salt
Dash of black pepper
2 tablespoons sugar (the secret touch!)
Instructions
Prep the potatoes:
Peel and dice the Yukon Gold potatoes into small, bite-sized cubes.
Cook the beef:
In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
Load the slow cooker:
Transfer the cooked beef and diced potatoes into a large crockpot.
Add the rest:
Pour in all the canned vegetables (with their juices), the condensed tomato soup, and diced tomatoes.
Season it up:
Add salt and black pepper to taste.
Grandma’s secret touch:
Stir in the sugar—it balances the acidity and gives the soup its signature comforting flavor.
Cook low and slow:
Mix everything well, cover, and cook on low for 2–3 hours, until the potatoes are tender and flavors are fully blended.
Recipe Notes
You can absolutely swap in fresh or frozen vegetables if you prefer. Just add 1–2 cups of beef broth to make up for the missing liquid.
If using canned vegetables, no extra liquid is needed—the juices from the cans create the perfect consistency.
This soup tastes even better the next day, making it perfect for leftovers!
Serving Tip:
Serve hot with crusty bread or warm cornbread for the ultimate comfort meal
