Creamy Spinach & Potato Gratin Bake

A rich and comforting oven-baked dish made with tender potato slices, creamy spinach, melted cheese, and aromatic herbs. Perfect as a cozy family dinner or a delicious side dish for any occasion.

Ingredients

4 medium potatoes (about 800 g), peeled and thinly sliced

4 cups fresh spinach leaves, chopped

1 medium onion, finely chopped

3 garlic cloves, minced

1 cup heavy cream or whole milk

1/2 cup sour cream or Greek yogurt

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 tablespoons olive oil or butter

Salt and black pepper, to taste

1/2 teaspoon ground nutmeg (optional)

1 teaspoon dried oregano or thyme

2 tablespoons breadcrumbs (optional, for a crispy topping)

Instructions

Prepare the oven

Preheat your oven to 190°C (375°F). Lightly grease a baking dish with butter or olive oil.

Cook the onion and garlic

Heat olive oil or butter in a skillet over medium heat. Sauté the onion for 3–4 minutes until soft and fragrant. Add the garlic and cook for another minute.

Add the spinach

Stir in the chopped spinach and cook until wilted. Season with salt, pepper, oregano, and nutmeg if using.

Make the creamy mixture

In a bowl, combine the cream, sour cream, and half of the Parmesan cheese. Mix well.

Layer the gratin

Arrange half of the sliced potatoes in the baking dish. Spread half of the spinach mixture on top, then drizzle some of the creamy sauce. Repeat the layers with the remaining potatoes and spinach.

Add the cheese topping

Sprinkle mozzarella cheese and the remaining Parmesan over the top. Add breadcrumbs for extra crunch if desired.

Bake

Cover with foil and bake for 35 minutes. Remove the foil and bake for another 20–25 minutes, or until the potatoes are tender and the top is golden and bubbly.

Serve and enjoy

Let the gratin rest for 5 minutes before serving. Enjoy it warm as a main dish or alongside grilled chicken, fish, or roasted vegetables.
