The Patty Melt is a beloved American diner classic—somewhere between a grilled cheese and a burger. This stacked version doubles down on flavor with buttery toasted bread, deeply caramelized onions, juicy beef patties, and layers of gooey melted cheese.
Ingredients (Serves 4)
1 lb (450 g) high-quality ground chuck (80/20 fat content)
8 slices thick-cut sourdough or rye bread
4 slices Swiss cheese
4 slices Gruyère or Havarti cheese
2 large yellow onions, thinly sliced
4 tablespoons unsalted butter, softened (for bread)
1 tablespoon olive oil (for onions)
Salt, to taste
Freshly cracked black pepper, to taste
Optional dipping sauce: brown gravy or spicy barbecue sauce
Instructions
1️⃣ Caramelize the Onions
Heat olive oil in a large skillet over low heat.
Add sliced onions and a pinch of salt.
Cook slowly for 20–25 minutes, stirring occasionally.
Continue until onions are deep golden, soft, and jam-like.
Remove from pan and set aside.
Tip: Low and slow is key. Don’t rush this step—this is where the deep flavor develops.
2️⃣ Prepare the Beef Patties
Divide ground chuck into 4 equal portions.
Gently shape into thin oval patties (slightly larger than your bread since they shrink).
Season both sides generously with salt and freshly cracked black pepper.
Heat a skillet or griddle over medium-high heat.
Cook patties 3–4 minutes per side, until nicely browned and cooked through.
Remove and rest briefly.
3️⃣ Assemble the Stack
Butter one side of each bread slice.
Place 4 slices butter-side down in a clean skillet over medium heat.
Layer in this order:
1 slice Swiss cheese
1 beef patty
A generous spoonful of caramelized onions
1 slice Gruyère (or Havarti)
Top with remaining bread slices, butter-side up.
4️⃣ Grill to Perfection
Cook 3–4 minutes per side, pressing gently with a spatula.
Flip carefully once the bottom is golden brown.
Continue cooking until:
Bread is deeply golden and crisp
Cheese is fully melted and gooey
Lower heat slightly if browning too fast.

For the “Ultimate Stack” effect, slice sandwiches in half and stack them high.
Serve hot with:
