Ingredients
1 lb (450 g) ground beef
4 medium potatoes, thinly sliced
2 medium carrots, diced or sliced
1 small onion, finely chopped
2 cups shredded cheddar cheese
1 can (10.5 oz) cream of mushroom soup
½ cup milk
1 teaspoon garlic powder
1 teaspoon paprika
Salt and black pepper, to taste
1 tablespoon olive oil
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
Heat olive oil in a skillet over medium heat. Add the onion and cook until softened. Stir in the ground beef and cook until browned. Drain any excess fat.
Season the beef mixture with garlic powder, paprika, salt, and black pepper.
In a bowl, whisk together the cream of mushroom soup and milk until smooth.
Arrange half of the sliced potatoes in the baking dish, followed by half of the carrots and half of the beef mixture.
Pour half of the soup mixture over the layers and sprinkle with 1 cup of shredded cheese.
Repeat the layers with the remaining potatoes, carrots, beef mixture, soup mixture, and cheese.
Cover with aluminum foil and bake for 45 minutes.
Remove the foil and bake for an additional 20–25 minutes, or until the potatoes are tender and the cheese is golden and bubbly.
Let the casserole rest for 10 minutes before serving. Garnish with fresh parsley if desired.
