Ingredients:

8 large eggs

¼ cup (60 ml) milk

1 cup fresh spinach, finely chopped

1 cup shredded cheddar or mozzarella cheese

¼ cup grated Parmesan cheese (optional)

½ small onion, finely diced

½ red bell pepper, finely diced

1 clove garlic, minced

½ teaspoon salt

¼ teaspoon black pepper

½ teaspoon Italian seasoning

Nonstick cooking spray or butter for greasing the muffin pan

 

 

 

Instructions:

Preheat your oven to 375°F (190°C) and lightly grease a 12-cup muffin tin.

In a large bowl, whisk together the eggs, milk, salt, pepper, and Italian seasoning until smooth.

Stir in the chopped spinach, onion, bell pepper, garlic, shredded cheese, and Parmesan.

Evenly divide the mixture among the muffin cups, filling each about three-quarters full.

Bake for 18–22 minutes, or until the egg muffins are puffed up and fully set in the center.

Let them cool for 5 minutes before carefully removing them from the pan.

Serve warm, or refrigerate in an airtight container for up to 4 days. Reheat in the microwave for 20–30 seconds before serving.

Add cooked bacon, sausage, diced ham, or mushrooms for extra flavor.
