Ingredients (Makes 6–8 Bowls)
4 medium potatoes, cubed (skin on)
1 bell pepper, finely chopped
1 lb (450 g) mild breakfast sausage
10 large eggs
1 cup shredded cheddar cheese
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon paprika
Salt and black pepper, to taste
Optional: chopped green onions, hot sauce, or fresh parsley for serving
Instructions
1. Roast the Potatoes
Preheat your oven to 425°F (220°C).
Toss the cubed potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread them evenly on a baking sheet and roast for 25–30 minutes, stirring halfway through, until golden and crispy.
2. Cook the Sausage and Peppers
While the potatoes cook, heat a large skillet over medium heat. Add the sausage and cook until browned and fully cooked, breaking it into crumbles as it cooks.
Add the chopped bell pepper and sauté for 3–4 minutes until slightly softened. Remove from heat.
3. Scramble the Eggs
In a bowl, whisk the eggs with a pinch of salt and pepper. Cook them in a lightly greased skillet over medium-low heat, stirring gently until soft and fluffy. Avoid overcooking since they will be reheated later.
4. Assemble the Bowls
Allow all ingredients to cool slightly.
Divide the roasted potatoes, sausage mixture, and scrambled eggs evenly among freezer-safe containers. Sprinkle each bowl generously with shredded cheddar cheese.
5. Freeze
Seal the containers tightly and label them with the date. Freeze for up to 3 months.
To Reheat
From frozen: Microwave for 4–5 minutes, stirring halfway through.
From thawed: Microwave for 2–3 minutes until heated through.
