Herb-Infused Moonshine Tomatoes

Fresh, aromatic, and garden-bright.

Ingredients

2 cups cherry tomatoes (whole or halved)

1½ cups Everclear or high-proof vodka

½ cup white vinegar or lemon juice

½ teaspoon kosher salt

4–6 fresh basil leaves

2 sprigs fresh thyme

1 sprig rosemary (optional)

1 teaspoon honey (optional, for a soft sweetness)

Instructions

Gently score tomatoes with an “X” at the base (optional for easier flavor absorption).

Place tomatoes and herbs in a clean mason jar.

In a bowl, combine Everclear, vinegar/lemon juice, salt, and honey.

Pour over the tomatoes, making sure they’re fully submerged.

Seal and refrigerate for 3–5 days before serving.

Serving tip: These are amazing on crostini, in Caprese skewers, or skewered in a martini.
