Creamy Layered Burrito Casserole
I had some extra ground beef in the fridge and didn’t feel like making individual burritos, so I decided to layer everything in a baking dish instead. It’s much easier to prepare, less messy, and the creamy sauce makes it even better than regular burritos.
Ingredients
1 pound ground beef
1 small onion, diced
1 packet taco seasoning
1 can refried beans
1 can cream of mushroom soup
½ cup sour cream
6 large flour tortillas
2 cups shredded cheddar cheese
Instructions
1. Cook the beef
In a large skillet, cook the ground beef with the diced onion over medium heat until the beef is fully browned. Drain off any excess grease.
2. Add seasoning and beans
Stir in the taco seasoning with a small splash of water. Let it simmer for about 1 minute. Add the refried beans and mix everything together until well combined.
3. Make the creamy sauce
In a small bowl, whisk together the cream of mushroom soup and sour cream until smooth.
4. Assemble the casserole
Grease a 9×13 inch baking dish.
Place a layer of flour tortillas on the bottom.
Spread half of the meat and bean mixture on top.
Add a layer of the creamy sauce.
Sprinkle some shredded cheddar cheese.
Repeat the layers one more time and finish with a thick layer of cheese on top.
5. Bake
Bake in a preheated oven at 350°F (175°C) for about 20 minutes, until the cheese is melted, bubbly, and the tortilla edges are slightly crispy.
Serving
Cut into squares and serve warm. Top with shredded lettuce, salsa, or extra sour cream if you like.
