Ingredients

For the Steaks:

4 ribeye or sirloin steaks (about 1 inch thick)

Salt and freshly ground black pepper, to taste

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

2 tablespoons olive oil

2 tablespoons unsalted butter

For the Creamy Mushroom Sauce:

2 tablespoons butter

8 ounces (225 g) cremini or button mushrooms, sliced

4 cloves garlic, minced

1 small shallot, finely chopped

1 cup heavy cream

½ cup beef broth

½ cup freshly grated Parmesan cheese

1 teaspoon Dijon mustard (optional)

1 teaspoon fresh thyme leaves or ½ teaspoon dried thyme

1 tablespoon chopped fresh parsley

Salt and black pepper, to taste

Instructions

Pat the steaks dry with paper towels. Season generously with salt, black pepper, garlic powder, onion powder, and smoked paprika.

Heat the olive oil in a large skillet over medium-high heat. Sear the steaks for 3–5 minutes per side, depending on your preferred doneness.

Add 2 tablespoons of butter during the final minute of cooking and spoon the melted butter over the steaks.

Transfer the steaks to a plate and let them rest for 5–10 minutes.

In the same skillet, melt the remaining butter. Add the mushrooms and cook until golden brown, about 6–8 minutes.

Stir in the shallot and garlic, cooking for 1 minute until fragrant.

Pour in the beef broth and scrape up the flavorful browned bits from the bottom of the pan. Simmer for 2–3 minutes.

Reduce the heat to low and stir in the heavy cream, Parmesan cheese, Dijon mustard, and thyme. Simmer gently until the sauce thickens, about 3–5 minutes. Season with salt and pepper to taste.

Return the steaks to the skillet, spoon the creamy mushroom sauce over the top, and warm through for 1–2 minutes.

Garnish with fresh parsley and serve immediately.
