1 cup powdered sugar
1 teaspoon peppermint extract
A few drops green food coloring
1 container (8 oz) whipped topping (like Cool Whip), thawed
For the Topping:
Extra whipped topping
Crushed cookies or chocolate shavings
Maraschino cherries (optional)
Instructions
1. Make the Crust
In a bowl, mix crushed cookies with melted butter until fully combined.
Press the mixture firmly into the bottom of a 9×9-inch dish.
Refrigerate for 15 minutes to set.
2. Prepare the Filling
In a large bowl, beat the softened cream cheese until smooth and creamy.
Add powdered sugar and peppermint extract.
Mix until fully combined and silky.
3. Add Color & Texture
Add a few drops of green food coloring and mix until you get a nice “shamrock” green
Gently fold in the whipped topping until light, fluffy, and smooth.
4. Assemble
Spread the mint filling evenly over the chilled crust.
Smooth the top with a spatula.
5. Chill
Refrigerate for at least 2–3 hours (or overnight for best results) until firm.
6. Decorate & Serve
Top with extra whipped topping.
Sprinkle crushed cookies or chocolate shavings.
Add cherries on top for a classic look
Tips:
Use peppermint extract carefully—too much can be strong.
For cleaner slices, chill overnight and cut with a warm knife.
You can freeze it for a more ice-cream-like texture.
Result:
A cool, creamy, minty dessert that tastes just like a shamrock shake, with a crunchy chocolate base
