Ingredients
475–500 g (about 3¾–4 cups) all-purpose wheat flour
5 g (1½ teaspoons) dry yeast
2 tablespoons sugar
2 tablespoons poppy seeds
1 teaspoon baking soda
1 teaspoon vinegar
1 egg
25 ml (2 tablespoons) vegetable oil
½ teaspoon salt
200 ml (¾ cup + 1 tablespoon) warm milk
Instructions
Activate the Yeast
In a small bowl, combine the warm milk, sugar, and dry yeast. Let it sit for 5–10 minutes until foamy.
Prepare the Dough
In a large mixing bowl, whisk together the flour and salt. Add the egg, vegetable oil, vinegar, poppy seeds, and baking soda.
Mix Everything Together
Pour in the yeast mixture and stir until a soft dough forms.
Knead the Dough
Knead for about 8–10 minutes until smooth and elastic. If needed, add a little more flour, one tablespoon at a time.
First Rise
Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.
Shape the Rolls
Punch down the dough and divide it into equal portions. Shape into small rolls or buns and place them on a lined baking tray.
Second Rise
Cover and let the rolls rise again for 20–30 minutes until puffy.
Bake
Bake in a preheated oven at 180°C (350°F) for 20–25 minutes, or until beautifully golden brown.
Serve & Enjoy
Brush with a little melted butter for extra softness and serve warm.
Tips
The vinegar reacts with the baking soda to create extra-soft, airy bread.
Add sesame seeds instead of poppy seeds for a different flavor.
