Tropical Creamy Cassava Roll with Sweet Coconut Latik

Soft, chewy cassava wrapped around a rich caramelized coconut filling and coated in fresh coconut flakes — this tropical dessert is creamy, comforting, and irresistibly delicious.

 

 

 

Ingredients

For the Cassava Layer

2 cups grated cassava

1 cup coconut milk

½ cup condensed milk

¼ cup sugar (adjust to taste)

¼ teaspoon salt

For the Sweet Latik Filling

1 cup coconut milk

½ cup brown sugar

¼ teaspoon salt

For the Coconut Coating

1 cup freshly grated coconut

 

 

 

 

Instructions

1. Prepare the Cassava Mixture

In a large mixing bowl, combine the grated cassava, coconut milk, condensed milk, sugar, and salt. Stir well until smooth and evenly mixed.

2. Steam Until Firm

Pour the mixture into a lightly greased pan or tray. Steam for 25–30 minutes, or until the cassava becomes firm and fully cooked. Remove from heat and allow it to cool slightly.

3. Make the Creamy Latik Filling

In a saucepan over medium heat, combine the coconut milk, brown sugar, and salt. Stir continuously until the mixture thickens into a rich, sticky caramel-like filling. Set aside to cool.

4. Assemble the Roll

While the cassava layer is still warm and flexible, place it on parchment paper or a clean surface. Gently flatten it into a rectangle. Spread the cooled latik filling evenly across the surface.

5. Roll and Chill

Carefully roll the cassava into a tight log, using the parchment paper to help shape it. Let it cool completely before slicing into serving pieces.

6. Coat with Coconut

Roll each slice in freshly grated coconut for extra flavor, softness, and a beautiful finish.
