Ultra-Fluffy Homemade Croissants
Yield: 10–12 croissants
Total Time: 2 hrs 30 mins
Prep Time: 30 mins
Rest Time: 1 hr 30 mins
Bake Time: 20 mins
Ingredients
- 500 g all-purpose flour
- 1 egg
- 10 g dry yeast (or 20 g fresh yeast)
- 80 g sugar
- 1 packet vanilla sugar
- 250 ml warm milk
- 60 g melted butter
- 1 pinch of salt
- 100 g softened butter (for layering)
- 1 egg yolk (for brushing)
Instructions
1. Prepare the Dough
In a large mixing bowl, combine the warm milk, yeast, and sugar.
Add the egg and melted butter, then mix in the flour, salt, and vanilla sugar.
Knead for about 10 minutes until the dough becomes smooth and elastic.
Cover the bowl and let the dough rest for 1 hour, or until doubled in size.
2. Create the Layers (Homemade Puff Style)
Divide the dough into 6 equal portions and shape them into balls.
Roll out each ball into a round disk.
Spread soft butter on each disk, stacking them on top of each other—but do not butter the last one.
Once stacked, roll the whole pile into one large circle.
Cut the dough into 8–12 triangles, like slicing a pie.
3. Shape the Croissants
Starting from the wide base, roll each triangle toward the tip to form the classic croissant shape.
Place the croissants on a baking tray lined with parchment paper.
Let them rest for 30–40 minutes until puffy and risen.
4. Bake
Brush the croissants with egg yolk for a golden finish.
Bake in a preheated oven at 180°C (350°F) for 18–20 minutes, or until beautifully golden and fluffy.
5. Finish & Serve
Let cool slightly, then dust with icing sugar for a delicate touch of sweetness.
Enjoy your homemade croissants — buttery, light, and irresistibly fluffy!
