BUTTER-POACHED LOBSTER 

 Ingredients

  • 4 lobster tails
  • 1 cup unsalted butter, cut into cubes
  • 1/4 cup water
  • Salt, to taste
  • Fresh lemon juice (optional)
  • Chopped chives or parsley, for garnish (optional)

 Instructions

1. Prepare the Lobster

  1. Use kitchen scissors to cut the top shell of each lobster tail down the center.
  2. Gently pull the meat out, keeping it attached at the end.
  3. Rinse and pat dry.

2. Make the Butter Poaching Base (Beurre Monté)

  1. In a saucepan over medium heat, add 1/4 cup water and bring it to a simmer.
  2. Slowly whisk in the butter cubes, a few at a time.
    • Do not let it boil—keep it below a simmer.
    • Add more butter until you get a smooth, creamy sauce.

3. Poach the Lobster

  1. Reduce heat to low so the butter stays warm but not boiling.
  2. Submerge the lobster meat into the butter.
  3. Poach gently for 6–8 minutes, or until the meat is opaque and tender.

4. Finish & Serve

  1. Season lightly with salt and a squeeze of lemon.
  2. Garnish with chopped chives or parsley.
  3. Serve immediately with extra warm butter for dipping.

 Tips

  • Keep the temperature low to avoid overcooking the lobster.
  • Butter-poached lobster pairs well with mashed potatoes, pasta, risotto, or grilled vegetables.
