BUTTER-POACHED LOBSTER
Ingredients
- 4 lobster tails
- 1 cup unsalted butter, cut into cubes
- 1/4 cup water
- Salt, to taste
- Fresh lemon juice (optional)
- Chopped chives or parsley, for garnish (optional)
Instructions
1. Prepare the Lobster
- Use kitchen scissors to cut the top shell of each lobster tail down the center.
- Gently pull the meat out, keeping it attached at the end.
- Rinse and pat dry.
2. Make the Butter Poaching Base (Beurre Monté)
- In a saucepan over medium heat, add 1/4 cup water and bring it to a simmer.
- Slowly whisk in the butter cubes, a few at a time.
- Do not let it boil—keep it below a simmer.
- Add more butter until you get a smooth, creamy sauce.
3. Poach the Lobster
- Reduce heat to low so the butter stays warm but not boiling.
- Submerge the lobster meat into the butter.
- Poach gently for 6–8 minutes, or until the meat is opaque and tender.
4. Finish & Serve
- Season lightly with salt and a squeeze of lemon.
- Garnish with chopped chives or parsley.
- Serve immediately with extra warm butter for dipping.
Tips
- Keep the temperature low to avoid overcooking the lobster.
- Butter-poached lobster pairs well with mashed potatoes, pasta, risotto, or grilled vegetables.
