Garlic Butter Steak with Roasted Baby Potatoes & Asparagus

Juicy, golden-seared steak finished in garlic butter, served with crispy roasted baby potatoes and tender asparagus — a true steakhouse-style dinner at home!

Ingredients (Serves 2–3)

For the Steak

2 ribeye or sirloin steaks (about 1 inch thick)

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon garlic powder

1 tablespoon olive oil

3 tablespoons butter

4 cloves garlic, smashed

2–3 sprigs fresh thyme or rosemary (optional)

For the Roasted Baby Potatoes

1 lb baby potatoes, halved

2 tablespoons olive oil

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika

½ teaspoon dried Italian seasoning

For the Asparagus

1 bunch asparagus, trimmed

1 tablespoon olive oil

¼ teaspoon salt

¼ teaspoon black pepper

1 clove garlic, minced (optional)

Fresh lemon juice (optional squeeze at the end)

 

Instructions

1️⃣ Roast the Potatoes

Preheat oven to 400°F (200°C).

Toss halved potatoes with olive oil, salt, pepper, paprika, and Italian seasoning.

Spread on a baking sheet in a single layer.

Roast for 25–30 minutes, flipping halfway, until golden and crispy.

2️⃣ Add the Asparagus

After potatoes have roasted about 15 minutes, toss asparagus with olive oil, salt, pepper, and garlic.

Add to the same pan (or separate pan).

Roast for 10–15 minutes, until tender but still slightly crisp.

Optional: squeeze fresh lemon juice before serving.

3️⃣ Cook the Steak

Pat steaks dry with paper towels (important for a good crust).

Season both sides with salt, pepper, and garlic powder.

Heat a cast-iron skillet over medium-high heat. Add olive oil.

Sear steaks for 3–4 minutes per side (for medium-rare). Adjust time for preferred doneness.

4️⃣ Garlic Butter Finish

Lower heat to medium.

Add butter, smashed garlic, and herbs to the pan.

Tilt the pan and spoon the melted garlic butter over the steaks continuously for 1–2 minutes.

5️⃣ Rest & Serve

Remove steaks and let rest 5–10 minutes before slicing.

Serve with roasted potatoes and asparagus.

Spoon extra garlic butter from the pan over everything.

 

 

Steak Doneness Guide

Rare: 120–125°F (49–52°C)

Medium-rare: 130–135°F (54–57°C)

Medium: 140–145°F (60–63°C)

Well done: 160°F+ (71°C+)

 

 

Pro Tips

Bring steak to room temperature 30 minutes before cooking.

Don’t overcrowd the pan.

For extra richness, add a splash of heavy cream to leftover pan butter and simmer briefly for a quick sauce.
