Ingredients
– 2 lbs (900 g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
– 1½ cups uncooked long-grain jasmine rice
– 2 cups low-sodium chicken broth
– 1 cup teriyaki sauce
– 2 tablespoons soy sauce
– 1 tablespoon sesame oil
– 3 cloves garlic, minced
– 1 tablespoon fresh ginger, grated
– 1 tablespoon honey or brown sugar (optional, for extra sweetness)
– 1 teaspoon black pepper
– 2 green onions, sliced
– 1 tablespoon sesame seeds
– Cooking spray or 1 tablespoon vegetable oil
Instructions
1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
2. In a large bowl, combine the teriyaki sauce, chicken broth, soy sauce, sesame oil, garlic, ginger, honey (if using), and black pepper.
3. Stir the uncooked rice into the baking dish, then pour in the sauce mixture and mix well.
4. Arrange the chicken pieces evenly over the rice, making sure they’re lightly coated with the sauce.
5. Cover tightly with aluminum foil and bake for 45 minutes.
6. Remove the foil, gently stir the rice, and return the dish to the oven uncovered for 15–20 minutes, or until the chicken is fully cooked and the rice is tender.
